Welcome to EVE!
First of all, if you haven't already, learn to fly your faction (or indeed your preferred faction) frigates. Get this up to level 3. (If you have this to 4 already, then even better.) This way you can fly something whilst waiting for training on other stuff to complete.
Next, cybernetics. This skill allows to to plug in neural implants which give bonus's to your attributes. Attributes are directly linked to training time. Higher Attributes = lower training times. (With a little searching it should be easy to come across the direct formula for this, if interested.) Getting this to level 1 will allow +2 implants which is ample to start with, but you will probably want to upgrade to +3's before too long once you can afford them which requires level 2 (I think).
Next, learning skills. These come in three forms: * Learning; * Basic attribute skills; * Advanced attribute skills.
The first one is a single skill and each level trained gives you a 5% bonus to learning speed. The attribute skills, there are 5 of both the basic and advanced skills for each of the five attributes, (Intelligence/Memory/Perception/Willpower/Charisma) for a grand total of ten skills. Each of these skills will give +1 attribute point per level.
Most people will recommend training learning and the all the basic attribute skills to level 4, and all the advanced ones to level 3. It's about a 10-15 day investment of time, but you'll probably make that back very quickly. For a new player, it's probably not worth the extra time going much further than this for a bit, else you'll get bored with your frigate and want to get some new toys/ships/etc. Maybe train them some more after a month or two if you want.
I highly recommend EveMon. This is a thrid party tool which almost everyone uses. (Download only from BattleClinic) Use this to plan what you want to train in the medium and longer terms, and it will offer advise on learning skills, implants, "Neural Remaps" and training orders in which to maximise your training times. You can save days, or even weeks sometimes by spending a bit of time up front for learning skills.
As for what to train, there's a huge array of options. The choice is totally up to you and depends on what you want to do. EVE has everything from mining, manufacturing, research, trading, mercenary work, mission running, "ratting", pirating (shameless plug for my pirate corp.) and all sorts of other things.
Perhaps the best advice I can give here is to join a corporation, see if you like what they do, if not, there's plenty more out there so join another. See what they do, see if you like it and then focus your training on getting into the same sort of thing.
Maybe they run level four missions in shiny Raven or Maelstrom battleships and you want to do the same. Or maybe they fly gangs of battle cruisers in low sec and attempt to kill everything that moves. (Another shameless self corp plug.)
You've got ample time to decide whilst you invest in your learning skills. Even more, if you train generic "core" skills (for an idea on what these are, take a look in the certificate planner and look for something called "Core Competency") as these will be useful no matter what ship you fly.
For more details on skills there is a skills forum, but try to have some more specific questions before posting there.
Finally, another third party tool which may help you decide what to train for is EFT. (Search and you will find it.) You can play with ships and fittings and try adjusting skills to see the effect. All sorts of numbers can be played with and ideas can be generated from that.
